Prep
Whisk together in a large bowl;
1 ½ cups (190g) all-purpose flour
3 tablespoon (35g) Sugar
2 teaspoon baking powder
¾ teaspoon salt
Combine in another bowl,
1 to 1 ¼ cups (235 to 295g) milk
3 tablespoons (45g) butter, melted
2 large eggs
( ½ teaspoon vanilla - optional, I just love the inviting smell it brings to my pancakes).
Mix the liquid ingredients into the flour mixture just until combined. If the batter still seems thick, add the remaining ¼ cup of milk and whisk.
Cooking
Place a non-stick skillet/pan on the burner on medium heat. More preferably, use a large non-stick skillet/pan to make up to 3 pancakes at once.
Once hot, Grease the skillet/pan with vegetable oil.
From just a few inches above the surface, ladle the batter onto the skillet/pan (to make mini size pancakes, use ¼ of the measuring cup).
Cook undisturbed until the bubbles form and pop on the surface of the pancakes and the bottom is golden brown (2 to 3 mins max).
Flip the pancakes to the other side and cook until golden brown which should be about a minute or 2.
Transfer to plate and keep warm.
Serve with colorful sides of fruits and some honey drizzle.

Easy and quick pancakes
Toast and Eggs
During the week, you may find me fussing about my kids eating a particular meal, but I’m learning to put a variety of foods on their plates and let them pick at what they like while encouraging them to try others. This mainly works on holidays or Saturday morning where we are not in a hurry to go anywhere.
Toast
Toast slices of whole (wheat) bread – or your choice of bread
Scrambled Eggs
Chop onions, tomatoes, and bell peppers
In a pan, pour a tablespoon of olive oil, and place on a medium heat stove,
Once hot, pour in the onion and allow to simmer, then follow with tomatoes and bell peppers,
Sprinkle a few pinches of salt to your taste and allow to fry.
Crack and beat 4 large eggs in a bowl (add Black pepper if there’s one close by).
Pour in the eggs into the pan and mix all ingredients until the eggs are fried.
Transfer to a serving dish.

1 tablespoon Olive oil

¼ Red and yellow bell pepper
1 tomato

Sweet potatoes and stir fried broccoli and beef


Ingredients
· 2 small tubers of sweet Potato
· 1 lbs(pound) of broccoli floret
· Olive oil
· 3 pieces of stew cut beef
· 1 ball of Onions
. 2 cloves of Garlic
. Pinch of salt
. Seasoning and spices of choice (I used oregano, thyme, and dill)
Cooking method
· Peel the 2 small sweet potatoes and dice to small cubes,
· Wash the broccoli florets and dice to smaller pieces.
. Chop onions and garlic
. Dice the beef and boil with a pinch of salt, chopped onions and spices of choice
· In a small pot, pour 3 table spoons of olive oil,
· Fry in some onions and garlic,
-Throw in the diced beef with some mixed herbs and sauté,
. Add seasoning of choice at desired quantity,
. Follow with the broccoli and stir until cooked.
Once cooked, allow to cool down and serve.
Left over should be stored immediately.
